Gina’s (hopefully to be) Famous Turkey Chilli!
1 1/2 lb. ground turkey
3 stalk celery, chopped
3 carrots, peeled and chopped
15 oz. can kidney beans
28 oz. can tomatoes
1/2 lg. onion, chopped
1 tsp. salt
1 tsp. chili powder
1 chilli pepper (I used 1/2 a serrano)
1 orange bell pepper
12 small quartered tomatillos
1 clove chopped garlic
3 or 4 “glugs” of red wine (1/4 bottle-ish)
1 packet of regular taco seasoning
1/2 lime – squeeze lime juice
3/4 can tomato paste (if you like it a little thicker)
In large skillet, saute ground turkey first, then add bell pepper, onion, garlic and celery. Drain and put mixture in crock pot. Add the can of tomatoes and seasonings (and everything else!) Cook low for 5 hours in crockpot. Add the kidney beans. Cook 15 minutes longer.
(Best eaten the next day once the ingredients have “married” in the pot)
*The next day, reheat, add some light sour cream and cilantro on top…enjoy!!
